Canadian Winter Meatloaf |
Ingredients
I found this recipe in an issue of Prairies North (winter 2009). This is a hearty Canadian meatloaf and a true comfort food. Just the thing on a cold and windy winter's night that warms the body and soul. Serve this with some good old fashioned mashed potatoes and some baby carrots with butter.
SERVES 4 -6 (change servings and units)
Ingredients
3 slices hearty white bread, crusts removed
1 cup milk
1 egg
1/2 onion
1 teaspoon fresh thyme (1/2 tsp dried)
1 tablespoon apple cider vinegar
1 lb lean ground beef
1/2 lb pork sausage, casings removed
2 tablespoons fresh dill, chopped
1 teaspoon salt
pepper, 3 grinds
1 tablespoon tomato paste
1 tablespoon honey
1 teaspoon brown mustard
1 pinch ground coriander (a fat pinch)
Cooking Instructions
Break the bread into a large bowl.
2In a blender or food processor, combine the milk, egg, onion, thyme, and vinegar.
3Pour over the bread and mix well. Allow enough time for the bread to soak up the milk.
4Add meats, dill, salt and pepper, mixing throughly.
5Pat the mixture into a loaf pan.
6Stir together the tomato paste, honey, mustard, and coriander. Spread over meat loaf.
7Bake at 350* for 1 hour.
8For a brown crust, turn on the broiler at the end of cooking.
